Cauliflower tots. Cauliflower rice. Cauliflower pizza crust. Cauliflower is having a major moment - and I want in.
I don't mean to be dramatic, but cauliflower is taking over the nation. And rightfully so. Hailed for its super levels of Vitamin C and K, this cruciferous vegetable has become the go-to healthy side on dining tables everywhere.
So, duh, cauliflower is healthy. We know this. But it seems like only recently the veg has been dubbed as the low-carb alternative to end all low-carb alternatives. Name any starch and it's likely that cauliflower could easily takes its place: potatoes, rice, bread (with the addition of cheese), couscous, whatever works. Believe me, I've tried it all. And it's so easy.
Here's the low-down:
If using it in place of potatoes or bread, you'll first need to steam your cauliflower. Then, dry it. Chuck that sucker in a food processor (no stems please!). Remove the excess water by straining through a cheesecloth. Many people use a mix of their favorite cheeses to keep the dough, dough-licious. My fav addition is freshly grated parm!
If you're going the couscous or rice route, then just break off the florets and grate them. Season, saute, and voila! You have a low-carb, high-deliciousness side dish.
If you're lazy like me, buy the pre-grated stuff. Trust me, it's a huge time saver. I know I'm not supposed to say that, because this is a food post, but whatever. I'm a realist.
